The grapes are chilled and pressed in a tank where they maintain skin contact for 2 4 hours. The wine is then racked into stainless steel, where it remains on fine lees. This is a truly dark rose, with fuller berry flavors along for the ride. Pair it with steak tartare, or takeaway sushi.
